Chicken and Bacon Salad – Meal Prep Recipe

This Chicken and Bacon Salad is one of my favourite salad recipes. I always serve it at parties and BBQs. Salty bacon, juicy chicken and tangy dressing makes for a delicious but healthy lunch. I make up a big batch that lasts for almost a week in the fridge.


Ingredients

  • 250g Onions 25p
  • 150ml Balsamic Vinegar 45p
  • 150ml Olive Oil £1.65
  • 500g Chicken Breast £3.01
  • 500g Bacon 99p

Total = £6.35

Makes 10 servings = 64p per serving

I buy my chicken breasts in big bulk packs of 2kg. The leftovers can be chopped into bite sized chunks and frozen for other meals.

Cooking bacon is cheapest at Lidl. I usually shop at Aldi so I make an occasional trip to Lidl just for bacon. I buy plenty of extra packs and pop them in the freezer for later.

How to Make Chicken and Bacon Salad

Finely dice the onions and mix them with 150ml of balsamic vinegar and 150ml of olive oil.  I like to use an old jam jar as the top is nice and wide for adding the diced onions.

Dice the chicken and bacon and fry them until cooked and crispy.  Add about half of the dressing whilst cooking.


How to Serve Chicken and Bacon Salad

Serve slightly warm with the rest of the dressing along with a side salad of lettuce, tomatoes, cucumber and buttered new potatoes.

I usually make this Chicken and Bacon Salad for parties and so I serve the side salad and potatoes separately. This way it’s easier for my guests to accommodate any dietary requirements and preferences.

This Chicken and Bacon Salad lasts for about 5 days in the fridge in a sealed container.

A Note on Food Safety

Freezing and defrosting food really isn’t complicated.  But it terrifies me how many people aren’t familiar with basic food hygiene so if you’re new to cooking from scratch and freezing please follow these safety guidlines.  

The important things to remember are:

  • Wash your hands and anything else that has been in contact with raw meat.
  • Meals should last for about 3 days in the fridge.
  • Do not defrost your meals at room temperature.    
  • Do not refreeze meals you have already defrosted.
  • Consume food before the use by date.
