This Ham Couscous Salad recipe is quick and easy to make. I make a big batch and it feeds my family for lunches all week. It’s tasty, satisfying and best of all costs just 51p per serving. Ham Couscous Salad can be served hot or cold so it’s great for this time of year when the weather is so unpredictable.
Ingredients
- 250g Couscous 24p
- Ham Trimmings £2.49
- Peppers £1.85
- 500g Red Onions 48p
- 500g Sweetcorn 73p
- 100g Butter 19p
- 2 Chicken Stock Cubes 11p
Total = £6.09
Makes 12 servings = 51p per serving

How to Make Ham Couscous Salad
Ham Couscous Salad couldn’t be simpler to prepare.
Make the Couscous
You’ll need a tub with a lid. Pour about 250g of couscous into the tub. Add enough boiling water to cover the couscous with a bit extra on top. Pop the lid on the tub and leave it to steam for 10 minutes.

After the couscous has absorbed all of the water sperate the grains with a fork.

Add a knob of butter.

And also add two stock cubes. I often prefer to use homemade chicken stock but for this recipe the store bought stock cubes work better.

Prepare the Vegetables
Then it’s just the veggies to prepare.
Finely dice about 500g of red onions.

Pop them into a frying pan and fry until soft.

Dice about 6 peppers.

Shred about 400g of ham trimmings.

Assemble the Salad
Mix the couscous and vegetables together.
And that’s it – simples!

This Ham Couscous Salad will keep in the fridge in an airtight container for up to 5-6 days.
I like to serve Ham Couscous Salad with a small garden salad.
If you’d like a little warmth for your lunch you can microwave this Ham Couscous Salad for a couple of minutes to heat it through.
