This traditional Lancashire Cheese Pie is indulgent comfort food at it’s very best. Sharp cheddar and tangy onions with a shortcrust pastry topping. It freezes beautifully so I make a batch of pies for easy weeknight meals.


Ingredients

  • Potatoes 1kg 68p
  • Cheese 900g £4.88
  • Red Onions 1kg 95p
  • Dijon Mustard 15p
  • Plain Flour 900g 21p
  • Butter 400g 95p
  • Garlic 24p
  • 1 Egg 20p
  • Splash Milk 15p

Total = £8.41

Makes 12 servings = 70p per serving

How to Make Traditional Lancashire Cheese Pie

Peel, chop and put the potatoes in water to boil.

Mince the garlic.

Dice the onions.

Fry them until soft.

Mash the boiled potatoes.

Add the onions and garlic.

And a good sized dollop of Dijon mustard.

Grate 900g of cheese.

Add the cheese to the filling mixture.

Give it a stir.

Fill the pies.

Traditional Lancashire Cheese Pie Pastry

Mix 900g of plain flour and 400g of butter.

Until it forms a dough.

Roll it out.

Lay the rolled pastry on top of the pies.

Trim off the excess pastry. I like to do this by rolling my rolling pin over the top of the pie. It trims the excess pastry off perfectly and seals the edges of the pie quickly and easily.

Mix a splash of milk with a whisked egg.

Brush it on top of the pies to glaze.

Cook or Freeze Traditional Lancashire Cheese Pie

Bake in the oven at 200 degrees centigrade / Gas Mark 4 for about 45 minutes.

Or cover your pies with clingfilm and leave them to cool completely before popping them in the freezer.

Grab a pie out of the freezer and let it defrost in the fridge overnight.

If you’re in a rush you can cook your Cheese pie in an air fryer. It should take about 20 minutes and will be cooked when the pastry is a lovely golden brown colour.
