How To Make Cottage Pie

Peel and chop the potatoes and pop them onto boil.

Cut the potatoes up quite small so that they cook faster as well as using less energy in the process.

Add four stock cubes.

And the bottle of Worcestershire sauce.

You can skip the Worcestershire sauce if you really want to but I highly recommend it.

Then cover the mince mixture with flour.

A good sized handful should be about right. Add more for a thicker sauce, less if you prefer it runnier.

Keep stirring it until the mince is browned.

Then half fill oven and freezer proof dishes with the mince mixture.

Once the potatoes are soft drain off the water.

Then add a generous dollop of butter.

And about 500g of grated cheese.

And mash it all together.

If you have a stand mixer use this to mash your potatoes. It’s much easier than doing it by hand and makes the most delicious creamy mash you can imagine.

Spoon the mashed potato over the mince mixture and drag a fork over the top to make lots of lovely ridges that will brown and crisp up in the oven.

Cover your cottage pies with a layer of cling film or reusable wrap. I’m saving up for some oven dishes with reusable lids to make this easier and more environmentally friendly.

Let your cottage pies cool down completely before popping them in the freezer.

Get your cottage pie out of the freezer the night before and let it defrost fully in the fridge.

Oven cook your cottage pie for about 40 minutes, you’ll know it’s ready when it’s piping hot throughout and the top has those lovely crusty brown bits.

We like it with veggies or baked beans, today Little Miss requested both and I couldn’t bring myself to tell a four year old she couldn’t have more veg, so we had our cottage pie with broccoli, sweetcorn and baked beans.
