This cheese sauce recipe has become a staple in my house. I always make loads hoping there will be leftovers but every time the whole lot gets eaten. We love it drizzled over chips and chicken goujons. It’s also great for parties.

  • Milk
  • Chilli Flakes (Optional)

I haven’t included any quantities for this Cheese Sauce Recipe because everything is “to taste”.


How to Make Cheese Sauce

This is one of those recipes that doesn’t really warrant the name.

I start with a little milk in a small pan over a low heat. I add a good sized dollop of cream cheese and heat the mixture gently until the cream cheese melts into the milk. I keep stirring it with a fork so that it doesn’t stick to the bottom of the pan.

Then I start adding small handfuls of grated cheese. I usually use cheap and cheerful strong cheddar but I’m pretty sure other cheese’s would work well too. Mozzarella would be fantastic.

I keep mixing and keep tasting – not eating it all out of the pan is the hardest part of making this cheese sauce!! Once I’m happy with the taste it’s good to serve up. Sometimes I add chilli flakes too – the kids aren’t too keen on them so it depends on who’s eating.

Notes on Making Cheese Sauce

I haven’t included costs or quantities for this cheese sauce recipe because all the ingredients are “to taste”. If you want a more runny sauce use more milk, add more cheese for a stronger sauce etc.

You could also try adding other flavours, chives would be fantastic for example.

I like to serve this cheese sauce warm so it’s nice and runny. It will stiffen up and solidify as it cools. You can reheat it in a microwave although I would avoid reheating it repeatedly.

If I’m planning on serving it cold such as at a party then I add extra milk to make it more runny when hot and a more dippable consistency when it cools down to room temperature.


How to Freeze Cheese Sauce

This Cheese Sauce freezes beautifully. It can separate a little as it freezes but it’s no problem to give it a little stir and recombine all the ingredients.

Make sure that your Cheese Sauce is completely cool before you pop it in the freezer and don’t forget to label it.

Defrost it in the fridge, it should only take a few hours.

Please remember that you shouldn’t re-freeze anything that’s already been frozen.


How to Serve Cheese Sauce

We love this Cheese Sauce generously poured over chips and chicken goujons. It also makes a great dip for chips and for crisps too. I love it as a Jack Potato topping. When it’s cold and more solid it’s a great addition to salads.
