It’s a great British Classic, a light and fluffy jacket potato with crispy skin stuffed with delicious creamy filling. Perfect for a healthy but satisfying lunch. Jacket Potatoes are quick and easy to cook in the air fryer and they come out perfectly every time.

Ingredients

  • Jacket Potatoes – 1 per person
  • Tuna
  • Sweetcorn
  • Mayonnaise

I haven’t included quantities for this recipe because they are all “to taste”. If you’re hungry add more tuna. If you’re not a fan, just add less sweetcorn- you could even leave it out of you don’t like it. I prefer my jacket potatoes with more mayonnaise than most people, so I add loads. It’s all about what tastes good to you so mix up some of the filling and give it a try, see what you think it needs more of. If you like a little spice try adding a pinch of chilli powder.

Mix the tuna and sweetcorn with plenty of mayonnaise.

How to Cook Jacket Potatoes in the Air Fryer

Pierce the skin of the potatoes with a sharp knife or fork. You need to pierce it in lots of different places all over the skin.

Put your potatoes on a microwave proof plate and pop them in the microwave for about 7 – 10 minutes. Two medium sized potatoes will take 7 minutes, four large potatoes will need 10 minutes.

The potatoes should be tender but not fully cooked.

After the potatoes have been cooked in the microwave transfer them to the air fryer to crisp up the skins. They should be cooked in the air fryer for the same amount of time as they had in the microwave.

The potatoes are ready when the skins are lovely and crispy and the flesh is soft just like mashed potatoes.

Serving Jacket Potatoes with Tuna

Cut your potatoes open and add a generous knob of butter. Then load them up with your delicious Tuna filling.

I like them served with a small side salad.

The tuna and sweetcorn filling will last in the fridge for three or four days. Keep it in an air tight container like a Tupperware tub.

This same filling can also be used for sandwiches and wraps.
