How to Make Overnight Porridge with Banana and Honey

I start my week off by making a few of these Overnight Porridges with Banana and Honey. I put them in plastic tubs in the fridge where they last for a few days. Then in the morning all I have to do is grab one (in-between sorting the kid’s breakfasts and firing up the coffee machine) and sling it in the microwave for 2 minutes. No decisions to make, no thinking required at all. I get a healthy, filling, hot breakfast that will keep me going until lunch. 

This Overnight Porridge Recipe can be made with different fruits and flavourings. It’s great with apples and blueberries are divine. But I keep coming back to this variation time and time again. It’s cheap and easy. 

I always have bananas in because it’s a fruit that the kids will frequently eat. But they go through phases, some weeks they will eat a whole pack of bananas and the next week they won’t eat a single one. If I’m buying them in for myself then they are always there if and when the kids want one. But because I’m eating them too they are never around long enough to go to waste. 

The recipe is super simple. It’s just the ingredients listed, 1/3 of a cup of oats, 1/2 a cup of milk and a chopped banana. Then I add a drop of honey and a sprinkle of ground cinnamon. 

I pop it all into a plastic tub, put the lid on and sling them in the fridge. I generally make about 3-4 at a time as they last for up to 4 days in the fridge. 

In the morning I just grab one, loosen the lid and microwave it for 2 minutes. 

I’ve even been known to throw (carefully) one in my car to eat after I’ve dropped the kids off at school before racing off to run errands.
