Slow Cooker Sausage Casserole – Batch Cook Recipe

This is one of my favourite quick and easy recipes. It makes a hearty meal with a tasty sauce for very little time and effort spent preparing it. The slow cooker does all the work for you. It’s also one of my cheapest recipes.


Ingredients

  • 2 Packs Sausages £2.90
  • 1 kg Onions 50p
  • 1 Bulb Garlic 20p
  • Large Pack Peppers 96p
  • 2 Tins Butter Beans 90p
  • 3 Tins Chopped Tomatoes 84p
  • Worcestershire Sauce 65p

Total Cost = £6.95

Makes 21 servings = 33p per serving

How To Make Sausage Casserole

Start by finely chopping the garlic.

Then dice the onions. Pop them both into a large frying pan and fry them until they’re translucent. Pop them in the slow cooker and turn it on to low.

Chop the peppers into bite sized pieces.

Brown the sausages. You don’t need to cook them through, just brown the outsides.

I’ve found that the texture and flavour of the sausages is greatly improved if I take the time to brown them before adding the sausages to my slow cooker. You can add them straight from the packet, they just won’t taste as good.

I like to cut my sausages in half. If I was just cooking for adults I probably wouldn’t do this. It makes it much easier to portion out the meals because they fit into the freezer tubs better. Cutting before cooking them also means I don’t have to help my children cut their sausages – so I get more time to enjoy my own dinner.

The rest of the ingredients are just thrown into the slow cooker on top of the sausages. Opening the tins is honestly the most time consuming part.

Use a full bottle of Worcestershire sauce. Just like with a lot of other recipes this is the magic ingredient that takes this sausage casserole from meh to tasty.

Give it all a good stir to combine all those flavours.

Cook your sausage casserole on low for at least 4 hours. I generally leave mine for about 8 hours. Anything to about 10 hours will be fine, whatever is convenient for you.


Tasting Notes

If I’m going to be out for the day and I want this sausage casserole to be cooked when I get home I will prepare it the night before and leave it in my fridge in the slow cooker bowl. Then in the morning I just get it out of the fridge and pop it in the slow cooker and turn it on. Easy peasey.

I like my sausage casserole with mustard mash. Just make mashed potato as normal and along with the butter add a very generous dollop of mustard. Any type will do but I particularly like the texture of wholegrain mustard for this recipe.

The kids aren’t so keen on mustard mash so I am resigned to adding my mustard at the table. It doesn’t mix in as well but it’s better than listening to the kids complain.
