This Plum Sauce is delicious. Sweet and sticky with just a hint of warming spice. It’s suitable for hot water bath Canning so it makes a brilliantly quick and easy weeknight meal.
Stir fry with noodles is a regular meal in my house. It’s a great way to use little bits of different vegetables out of the garden. The kids love the noodles.
I’ve tried various different methods of batch cooking stir frys but this is my favourite. I can use any veggies I have on hand and the sauce is safely preserved in jars. The noodles are dried so they live happily in the pantry until I need them. There’s just chicken breast to get out of the freezer and defrost.
Of course this sauce could also be served with rice instead of noodles and with any other meat. Chicken and noodles is just our favourite.
Ingredients
- 400g Brown Sugar 56p
- 200g White Sugar 13p
- 250ml Cider Vinegar 34p
- Pinch of Chilli Flakes 2p
- 2 Tablespoons Mustard Seeds 20p
- 2 Cloves Garlic 10p
- 1 Large Onion 10p
- Thumb Sized Piece Ginger Root 30p
- Salt
- 2kg Plums £2.95
Total Cost = £4.70
Makes 7 300ml Jars = 67p per jar

Method
Remove the stones and chop all of the plums into small pieces.
Add the sugar, vinegar, onion, garlic, ginger and all the other spices to a large pan.
Bring it to the boil.
Then add the plums.
Boil it for a good hour, stirring frequently.
Once the sauce starts to thicken turn down the heat and blend it with a hand blender. Be careful, it will be very hot.
Spoon the plum sauce into clean jars and tighten the lids.
Process the jars in a hot water bath canner at 100 degrees Celsius for 20 minutes.
Allow the jars to cool undisturbed.
To make the stir fry boil the noodles, brown the chicken and sling them into a large pan or wok with an assortment of veggies. Pour in a jar of sauce and heat it through. Easy peasy lemon squeezey.
