Here’s my meatloaf recipe. It costs just 55p per serving and tastes great, even my kids like it. I make a big batch and freeze in oven dishes for super quick and easy weeknight diners. It’s pretty quick and easy to make too.


My meatball recipe is a big hit with my kids so I thought I’d try similar recipes to see if I can add more healthy budget meals that they will consistently eat without a battle.

Ingredients

  • 2kg Beef Mince £9.16
  • 3 Onions 25p
  • 3 Cloves Garlic 10p
  • 3 Eggs 59p
  • Tomato Puree 59p
  • Worcestershire Sauce 69p
  • 4 Beef Stock Cubes 22p
  • Salt
  • Pepper
  • Stale Bread
  • Parsley

Total = £11.60

Makes 21 servings = 55p per serving

How to Make Meatloaf

I make my own breadcrumbs from stale bread and crusts. I pop the unwanted bread in the freezer and get it out the day before I want to make meatballs. After the bread has defrosted I whizz it through my food processor until it’s broken down into fine breadcrumbs.

I also throw the parsley into the food processor too.

It is possible to make your own breadcrumbs without a food processor. I used to chop the pieces of bread into tiny little chunks. It was quite time consuming and the breadcrumbs were certainly on the chunky side. But it can be done this way if you don’t have a food processor.

You need to use a big bowl or pan to mix all of the ingredients.

I use the high fat mince. Mostly because it’s cheaper but it also means that you don’t need to add any fat to the meatloaf to cook it and keep it nice and juicy.

Add the tomato puree.

Three eggs and a small bottle of Worcestershire Sauce.

Finely dice and fry the onions.

Add four stock cubes to the pan.

Once the onions are cooked add them to the Meatloaf mixture.

And give it a really good mix.

Press the Meatloaf mixture into oven dishes.

To Freeze Meatloaf

Cover each dish with clingfilm or a reusable lid and pop them in the freezer. Defrost in the fridge overnight.

To Cook Meatloaf

Pop your defrosted Meatloaf into an oven at Gas Mark 4 for about 30 – 40 minutes. It should be nice and brown and piping hot throughout.

To Serve Meatloaf

We like our meatloaf served with gravy, mashed potatoes and vegetables.
