This is a fantastic fridge clearing recipe because you can add just about any meat and vegetables. It’s also fab for early harvests from the garden when you don’t have enough of anything for a full portion. This Frittata is also great served cool so it’s great for lunch boxes and picnics.
Ingredients
- 6 Eggs £1.18
- 1 Pint Milk 36p
- 250g Cheese £1.22
- 250g Bacon 25p
- 100ml Double Cream 30p
- 50g Soft Cheese 21p
Total = £3.52

How to Cook Bacon and Cheese Frittata
Chop the bacon into bite sized pieces. I use cooking bacon because it’s much cheaper than sliced bacon. Fry the bacon.
Make sure you’re using a non-stick frying pan that can go in the oven or grill.
Crack the eggs into a large bowl. Add the pint of milk and stir it well.
Pour the mixture over the cooked bacon.
Add the grated cheese. Sprinkle it evenly over the mixture, there’s no need to mix it in.

Keep the pan over the heat until the edges of the frittata start to cook and solidify.
Pop the whole pan in the oven on gas mark 4 for about 20 minutes. It’s cooked once the middle is set and not runny.

And that’s it! Easy right?!?!
Bacon and Cheese Frittata Variations
This is a great fridge clearer recipe. The only essential ingredients are the eggs, milk and cheese.
I like it with bacon because bacon. Plus it’s just about the cheapest meat availible at the moment. But you can use any meat of fish or make it vegetarian.
You can use any cheese and dairy products you wish. Cheddar is usually what I have in the fridge. Soft cheeses are great too, I like to add a little soft cheese if I have some handy but this Bacon and Cheese Frittata recipe works great without the soft cheese. You can also add any dairy products you need to use up. Cream is great as is sour cream. Again you can totally make this Bacon and Cheese Frittata recipe without the added cream, it just won’t be as rich.
You can also add any vegetables or even herbs. It works great with peas, spring onions, parsley, mint, peppers, onions, to name just the one’s that I’ve personably tried. If you want to use root vegetables such as potatoes or turnips you need to slice them not cut them into chunks and cook them first. You could par boil them or fry them before adding the bacon.
My kids are currently in a phase of rejecting any vegetables that are cooked into anything. So I’ve made this Bacon and Cheese Frittata recipe without any added vegetables, serving them on the side instead. Normally I add whatever fresh veg I have to hand and usually some potatoes to make it a complete meal.
