Rich and creamy chicken soup with delicious garlic mushrooms. The perfect healthy comfort food for chilly days. This recipe makes a big batch to feed a crowd or freeze it and enjoy easy lunches future you will thank you for.
Ingredients
- 900g Chicken Thighs £4.99
- 1.3kg Mushrooms £3.58
- 1kg Onions 99p
- 1 Bulb Garlic 24p
- 1 Pack Celery 57p
- 200g Butter 40p
- 300ml Cream 99p
- 3 Tablespoons Plain Flour 15p
- Parsley
Total = £11.91
Makes 16 servings = 74p per serving

How to Make Chicken and Mushroom Soup
Mince the garlic.

Dice the Onions.

Fry them both until soft and translucent. Pop them into your slow cooker.

Chop the mushrooms.

Fry them until soft. Then add them, to the slow cooker.

Dice the celery and throw that in the slow cooker.

Cut the chicken thighs into bite sized pieces and add them to the slow cooker.

Sprinkle the mixture with flour.

Add about 200g of butter and give it a stir.

Cook on low for between 5 and 8 hours.
Stir in the cream and chopped parsley.

Season with salt and pepper as you like it.
If you’re not serving your Chicken and Mushroom Soup straight away portion it into freezer tubs and let it cool completely before freezing. Don’t forget to label your freezer tubs!
Let it defrost in the fridge overnight and reheat on the hob or in the microwave.
I like this soup with a fresh baked roll and butter.
