I make a big batch of this African Chicken soup every winter. It’s packed full of vegetables and has loads of rich flavour. I cook it long and low in the slow cooker so the chicken is deliciously tender.


Ingredients

  • 900g Chicken Thigh Fillets £5.19
  • 1 kg Onions 65p
  • 1 kg Sweet Potatoes £1.09
  • 600g Peppers £1.45
  • Chillies 57p
  • Ginger 79p
  • Garlic 17p
  • 3 Tins Chopped Tomatoes £1.05
  • Chicken Stock 17p
  • Peanut Butter £1.15
  • Cayenne Pepper 25p
  • Cumin 25p

Total Cost = £12.78

Makes 18 servings = 71p per serving

How To Cook African Chicken Soup

Start by mincing the garlic. Peel off the papery skin then use a garlic press or finely chop the garlic cloves with a sharp knife. Use a full bulb of garlic.

Then chop the onions. Chop off the tops and bottoms of each onions then chop them up with a sharp knife.

Fry the garlic and onions in oil until they are translucent. Then put them in the slow cooker.

Peel and chop the potatoes. Add them to the slow cooker. Chop them quite small, as if you were making mashed potatoes.

Remove the seeds and chop the peppers. Add them to the slow cooker.

Add the chicken thighs to the slow cooker whole. This is so much easier than having to chop them up first. Just empty the packaging into the slow cooker.

Peel the ginger with a metal tea spoon. It sounds weird I know but give it a try, it’s easy I promise.

I have finally got round to investing in a micro grater, mostly for this particular recipe. It’s fantastic! My piece of ginger has been transformed into mush. If you don’t have a micro grater you can just chop your ginger as finely as you possibly can.

Add the chopped or grated ginger to your slow cooker.

Chop the chillies. Add them to the slow cooker.

Pour three tins of chopped tomatoes into the slow cooker.

Add four cubes of chicken stock.

Then add the spices. I use about a quarter of a jar of cumin and the same of cayenne pepper. This gives my African Chicken Soup plenty of kick but without it being too spicy for the children to enjoy. If I were making it just for myself I’d add about twice that amount of spices, but I do like my African Chicken Soup on the spicy side.

Add the full jar of peanut butter.

Give the ingredients a stir. Set the slow cooker to low and leave it for about 6 hours. It will be totally fine if it’s more convenient for you to leave it for longer. This batch was in the slow cooker for about 8 hours and it’s cooked perfectly.

Once the chicken is completely cooked through and deliciously tender remove the chicken pieces from the slow cooker. Pop them onto a chopping board and use a pair of forks to pull the pieces of chicken apart leaving little threads of chicken.

Blend the rest of the soup to your liking. My kids prefer their soup pretty smooth so that’s how I usually do it. I have made this soup without blending it at all and it makes a lovely stew.

Add the chicken back into the slow cooker and give it a stir.

Portion the African Chicken Soup into freezer tubs and let it cool completely before freezing.
