Tomato and Roasted Pepper Soup Recipe – Budget Batch Cook

Roasted peppers add a delicious dimension of flavour to an otherwise plain and simple tomato soup.  I make a big batch and store them in my freezer for weeks of easy, hot and healthy lunches. 


Ingredients

  • 3 Tins Chopped Tomatoes £1.05
  • 1kg Red Onions 95p
  • Peppers £1.55
  • Garlic Bulb 24p

Total Cost = £3.79

Makes 8 servings = 47p per serving

I usually serve this Tomato and Roasted Pepper Soup with a fresh baked roll and a little butter. The rolls are just under 22p each. Allowing a few pennies for the butter that’s just 70p for a healthy and filling hot lunch.

How to Cook Tomato and Roasted Pepper Soup

Start by finely chopping the garlic.

Dice the onions and fry them with the garlic.

Once the onions and garlic have turned translucent add 3 tins of chopped tomatoes.

Roughly chop the peppers and roast them in the oven.

Once they have cooked add the peppers to the pan and bring it to the boil.

Blend the soup and tub it up for the freezer.

If the soup is too thick you can water it down with hot water before serving.
