This Chinese Chicken Curry tastes just like takeaway. The texture and flavours are just perfect. Even my fussy kids clean their plates. I make a big batch and freeze most of it for quick and easy week night dinners, just boil some rice, reheat the curry and dinner’s on the table. And it’s super cheap at just 66p per portion!

How to Make Chinese Chicken Curry
Cut your chicken thigh fillets into bite sized pieces. You could use chicken breast if you prefer but chicken thigh is cheaper.

Pop the chicken into a tub and pour in the whole bottle of soy sauce. Sprinkle in some cornflour and give it a stir. Pop it in the fridge to marinade.

Peel and chop your onions.

Grate the ginger.

Mince the garlic.

Then fry them with the onions until they are soft and translucent.

Next add the spices. They are all added to taste but if you want a quantity to start off with use 1 table spoon of each spice plus an extra tablespoon full of curry powder.

Add the chicken and any liquid that’s left at the bottom of the tub.
Continue to fry the mixture until the chicken is browned.
Then add the stock. Homemade stock is best for this recipe but if you don’t have any use 4 stock cubes and about half a pint of hot water.

Simmer for about 15 minutes until the chicken is cooked through but still tender.
Portion into freezer tubs and let them cool completely before freezing.

Defrost your curry overnight in the fridge and reheat it on the stove or in a microwave.
