Potato soup loaded with heaps of cheese and topped with bacon? Yes please! It tastes just as good as it sounds. Just the thing when you want guilt free comfort food. And would you believe it costs just 33p per serving?!?

  • Butter 50p
  • Double Cream £1.05

Makes 27 servings = 33p per serving

How To Cook Loaded Potato Soup

Peel and chop the potatoes into bite sized chunks. Put them into a large pan with water and boil the potatoes until they are very soft.

Meanwhile, chop the bacon into little chunks and fry them until they’re really crispy. Set them to one side on a plate or such like.

Chop the onions and fry them in the bacon grease. This saves a little bit of money but also adds a lot of flavour to the Loaded Potato Soup.

Drain the potatoes and add about a pint of milk to the pan. Add about 250g of butter and a generous covering of plain flour. Give it a stir.

Turn down the heat and leave the potato mixture gently cooking.

Once the onions are translucent add them to the potato mixture.

Peel and chop the carrots and fry them in the same pan as the onions. Once they are fork tender add them to the potato mixture.

Continue cooking until the mixture is more of a soft mush. If you want you can do this in a slow cooker. Cooking this Loaded Potato Soup in a slow cooker doesn’t improve the flavour particularly but it does mean that you can prepare this soup in the morning and have it ready to serve at any point in the day.

You can choose the blend the Loaded Potato Soup to whatever extent you wish. Leave it unblended for chunks of potatoes or blend until smooth, or anything in between.

Once you are happy with the texture of the Loaded Potato Soup add the grated cheese and cream. Give it a good stir and serve with the fried bacon bits sprinkled on top.

Once the Loaded Potato Soup has cooled it can be frozen for later. I make a big batch for hot Loaded Potato Soup to last through the whole winter.
